My wife felt a little guilty for not cooking on Thanksgiving (she really shouldn't since it was her birthday) so today she made her first whole chicken. (speaking as the husband, it was mighty mighty tasty). Recipe: Whole chicken (ours was 4.5 lbs) Sweet potatoes (2 medium-sized) New red potatoes (6 total) 2 cups french green beans 1 large onion i cup corn 1/2 cup chicken broth 1/2 stick butter seasonings to taste (I used 5 garlic cloves, fresh rosemary, sea salt and cracked pepper) Layer the onions along the bottom of the crockpot, after dressing the chicken with seasonings, place chicken onto the onions. Here's where it gets fun - making slivers under the chicken's skin, insert pats of butter all over. Place the veggies all around your chicken and pour the chicken broth over everything. Cover and cook on low for 8-10 hours. It's that easy!
